11 Feb Cashew Trio – healthy version!
- 500g cashews
- 10 dates
- 200g shelled sunflower seeds
Cashews should be soaked overnight and dates for 15 minutes in hot water.
Blend sunflower seeds and dates. Mixture should be sticky. Put the mixture into small molds.
Separate the cashews from the water and blend 1/3 of them with lemon juice and grated lemon peel.
When they reach a smooth consistency, spread on top of the layer of dates and sunflower seeds. Put the mold in the freezer.
Blend the rest of the cashews with cinnamon. You can add a tablespoon of honey and blend again. Take the mold from the freezer and add the third layer. Put in the fridge for at least an hour. You can decorate whit whatever you want, there is a lot of options. I sprinkle coffee. 😉
